Hot Rainbow Cereal Recipe
Why Rainbow? This hearty, fiber-rich hot cereal can have a multitude of different toppings including fresh fruit, dried super fruits, nuts, seeds, grass-fed butter or coconut oil. It's healthy for Vegans, Keto Diet folks, and Celiacs! Just skip the grain and use soaked Quinoa or Buckwheat for Keto.
1/4 cup of hot cereal (uncooked) of your choice (steel cut oats, oat groats, Scottish oatmeal, buckwheat cereal, rice cereal, quinoa flakes, wheat berries or a mix of different grains). If you have time the night before, soak it in the water with 1 tsp of whey from yogurt or lemon juice. 3/4 cup water or milk (try coconut milk for a tasty option) 1/8 tsp sea salt
Zap all ingredients it in a microwave with a cover on it for 3-5 minutes on High. I just use another glass bowl on top or a glass Tupperware. Use common sense, no metal or plastic or paper in the microwave. You can even use a coffee mug as long as it's microwaves safe (most are).
Now your cereal is piping hot! Let it sit for 2 min. Mix in 2TB of grass-fed butter or coconut oil. This will help keep your energy up in the day. Good fats slow down the sugars from absorbing into our blood. They also help our body not turn sugar straight into to belly fat. Optional: Add 1-3 TB of raw honey or maple syrup or coconut palm sugar. Toss in one or all of the following:
frozen blueberries blackberries raspberries marion berries raisins chopped dates dried cranberries goji berries walnuts cashew pieces almonds slivered hemp hearts
flax seeds or flax meal
bee pollen pumpkin seeds coconut flakes.
Lastly stir in some creamy: organic whole yogurt kefir sour cream cream cheese or non-dairy yogurt
My favorite combo currently is Walnuts + a sprinkle of nutmeg, cardamom, and cinnamon + maple syrup + whole yogurt. Mmmmmm. Try out different combinations, mix in spices like cinnamon or vanilla, play with it! Each day can be different!
