My Favorite Hearty Winter Soup

Sometimes it is the simplest meals that are the best for you. It doesn't get any simpler than potatoes cooked in bone broth. It is perfect for anyone with gut issues -although potatoes are in the nightshade family, so tread cautiously. If it doesn't agree with you, try soaked/sprouted grains instead. But the mineral-rich broth is wonderful for folks with a cold or flu. If you are not able to keep food down, just try sipping the broth by itself, maybe with a little minced raw garlic. Raw garlic has allicin in it, which is a natural antibiotic!

My children love this soup. But maybe I just have very special fairy children. I love sipping this on a cold winter's day.

Mineral Super Soup

Serves: 8

Time: 15 min (with Instant Pot), 1 hour stovetop


10 cups Bone broth - my favorite is chicken

10 medium size Red potatoes

Sea salt for seasoning

1 garlic clove

Optional: 1 tsp chili powder


  1. Wash & chop potatoes into roughly 1" cubes. You can either peel them before or leave the peels on. The peels have fiber in them and are very healthy for you.

  2. Pour bone broth into the Instant Pot or deep soup pot. Place chopped potatoes in the pot as well. Add the optional chili powder for a spice kick.

  3. For stovetop: Bring to a boil, then simmer on low for 30-45 minutes until potatoes are soft.

  4. For Instant Pot: Follow instructions for your particular model. Mine is a Duo Plus so 3-4 minutes on high for cubed potatoes, but I like 8 minutes for really soft potatoes. I press Pressure Cook, then adjust the time & press "keep warm" to turn that setting off. Remember to wait 30 minutes before pressing on the button to release pressure.

  5. Chop your garlic clove into very tiny pieces and let it rest on the cutting board.

  6. Open the Instant Pot and enjoy your soup hot with a sprinkle of sea salt and the minced raw garlic.
